KHRUSTYKY COOKIES

In Ukraine, Khrustyky are a beloved treat often made for holidays and family celebrations.

 

Their name comes from the Ukrainian word for “crunch,” which perfectly describes their light, crispy texture. These delicate cookies are twisted into beautiful shapes, fried until golden, and finished with a sweet snowfall of powdered sugar.

 

One bite delivers a delightful crunch that melts into sweetness.

INGREDIENTS                                       

  • 2 large eggs, room temp

  • 2 Tbsp sugar

  • 3 large egg yolks, room temp

  • 1 ½ cups all-purpose flour

  • 1 Tbsp heavy whipping cream

  • ½ tsp salt

  • 1 Tbsp vanilla extract

  • Confectioners’ sugar

  • Oil for deep fat frying

DIRECTIONS​

  1. In a large bowl, beat the eggs, egg yolks, cream and vanilla. Beat in sugar. Combine flour and salt: stir into the egg mixture until smooth (dough will be soft). Divide in 4 portions. 
     

  2. On a well floured surface, roll out 1 portion to â…› inch thickness. Cut into 1 ½ inch strips; cut strips diagonally into 3 pieces. Cut a 1 ½ slit lengthwise into the center of each piece; pull 1 end of strip through the slit to make a loop. Cover shaped pieces while rolling out and cutting the remaining dough.
     

  3. In a deep cast-iron or electric skillet, heat 2-3 inches of oil to 375*. Fry pastries in batches, until golden brown, turning once. Drain on paper towels. Dust with confectioners’ sugar.
