Rosettes from Norway.PNG

In Norway, rosettes are a traditional holiday cookie often made during Christmas and special family gatherings.

The delicate batter is pressed into beautiful flower shapes using a special iron, then fried until crisp and golden. After cooling, they’re sprinkled with powdered sugar for a light touch of sweetness.

Crispy, airy, and stunning to look at, rosettes are a treat that feels almost too pretty to eat.

INGREDIENTS

  • Fry oil

  • 2 eggs

  • 1 Tbsp granulated sugar

  • ¼ tsp salt

  • 1 cup all-purpose flour

  • ¾ cup milk

  • 1 tsp vanilla extract

  • Confectioners’ sugar & cinnamon

DIRECTIONS

  1. In a medium size deep pot, bring 2 ½” of fry oil to 375*.

  2. Whisk together sugar, salt and eggs until combined.

  3. Add the remaining ingredients for the Rosette batter and whisk until just combined.

  4. Place your Rosette irons in the hot oil and allow to heat up for 3-4 minutes.

  5. Working with one iron at a time, dip your iron into the batter so the iron is â…ž covered.

  6. Move the batter covered iron to the hot oil and cook for about 30 seconds-until light golden brown and Rosette starts to peel away from the iron.

  7. Place the Rosette on a paper towel lined cooling rack.

  8. Return the iron to the oil and let it heat up for about 1 minute before repeating the flying process.

  9. Allow to cool completely before dusting with cinnamon and confectioners’ sugar.
